Dessert: So Simple Gluten Free and Vegan Apple Crisp
This dessert is for the days when you just need to satisfy your sweet tooth! The best part is you won't feel too guilty because apples are so good for you. The apple is known for its phyto-nutrients and antioxidants, essential for your body's growth, development, and overall wellness. Apples also have good amounts of vitamin C, beta-carotenes, and B complex vitamins. The old adage, "An apple a day keeps the doctor away" has a lot of truth to it!
If that's not enough, walnuts and cinnamon are also great for your body's health and wellness. Cinnamon is good for heart health, brain function, blood sugar regulation and diabetes prevention. Walnuts have powerful antioxidants, and also support heart and brain health.
For the topping:
Gluten free all purpose flour 1/2 cup
Gluten free oats 1/2 cup
Dark brown sugar 1/2 cup
Baking powder 1/2 teaspoon
Xantham gum 1/4 teaspoon
Cinnamon 1/4 teaspoon
Salt a dash
Walnuts 1/3 cup
For the apple filling:
Apples, peeled and sliced 3 - 4
Vegan buttery spread 3 tablespoons, melted
Gluten free flour 2 tablespoons
Lemon juice 1 tablespoon
Almond milk 3 tablespoons
Vanilla extract 1/2 tablespoon
Brown sugar 1/4 cup
Cinnamon 1/2 tsp
Salt a dash
Yield: Makes 6 servings
Total Time: 40 minutes
Prep: preheat oven to 375 F. Peel and slice apples medium thin.
1. In a medium bowl combine the topping ingredients with a fork until it resembles small crumbs. Add the chopped walnuts last after rest is mixed. Refrigerate while you prepare the filling.
2. In a small bowl combine melted buttery spread (melt in microwave for 30 sec). Combine with flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat. Pour apple mixture into a baking dish and spread out until evenly distributed.
3. Pour topping over apples. Bake for 30 minutes or until golden brown and top is set. Remove from oven and let cool at least 10 minutes before serving.
4. Optional: serve with (non-dairy) vanilla ice cream. For non vegans go for regular ice cream. :)
